This recipe will feed two hungry 70lb dogs and two hungry two-legged people.
You need:
Tempeh:
2 packs of Tempeh (Make sure its the plain Tempeh only, found in the freezer department. I usually take it out of the freezer and leave it in the fridge for a day.)
Cut the squares into 9 pieces each - Thats what I do - good size.
Take a heavy bottom frying pan - heat about 2 TB of either coconut oil, or grapeseed oil or sunflower oil - add the tempeh and fry it for about 3 minutes on one side - DO NOT turn it sooner or you ll not have a nice colour to it.
You might have to do it in two frying pans or do the dogs 9 pieces before you do yours - they'll want it cooled off anyway.
While the tempeh is cooking, prepare the pesto:
Combine all these ingredients in a food processor:
Arrange polenta in 4 bowls - add freshly ground pepper on the two portions for the tw0olegged people.
Divide the tempeh in 4 portions arrange on polenta. Top it all up with the pesto - I give the dogs less pesto...
I do drizzle a bit off sunflower or olive oil on top off the dogs dinners.
This recipe is very cost effective at about $22 in total. That is pretty inexpensive when you consider the cost of three cans of dog food - or feeding on the raw meat diet.
Plus you all get really good protein (about 30g per portion)- no fillers. Healthy carbs, fibre and good fats.
