Pasta Carbonera

Pasta Carbonera - Eva Style

In a large pot boil the water. Pasta needs to"swim" in water. Add 1 pack of whole grain SPELT Pasta to the boiling water. You can choose any shape - the dogs do not care. Boil for about 5 minutes - al dente. Do not over cook. Drain in colander - reserve 1/2 c of the cooking water. Mix 1 table spoon of olive oil into the pasta.

Beat 4 eggs with a fork adding about 1/4 c of water - set aside. (note on eggs: Use ONLY real organic eggs - as local as possible).

Put pot back on the stove on low/medium. Add 4 tb of olive oil. Add the reserved cooking water. Now add the eggs, stirring. Now add 2 cups (packed) of finely chopped greens - kale or parsley or chard or spinach - or a mix of all of the above. Cook on low for about 3 minutes - now add about 2/3 of the pasta. Stir it all up, take the pot off the stove and divide into two dishes.

This is a very fast dinner to make for them. And its stuff we usually have in the cupboard anyway. And you can use frozen greens as well!

The remaining pasta..you can either eat that yourself (that's what I do) or give to the dogs the next day with a pumpkin mash and some other protein.

This dinner is a HUGE hit for the dogs. They LOVE pasta.
