Pumpkin Mash

This is a real life saver in many ways. Pumpkin is really healthy and good for the stomach. I always have some ready in the freezer and cans of pure pumpkin on hand. Of course this includes all the wonderful winter squashes - like butternut and Hokkaido​ with its dense orange inside.

There are many different ways to prepare​ this versatile vegetable. One way of cooking a pumpkin - or larger squash - is to place the whole pumpkin in a large pan in the oven at 180 Celsius (350 Fahrenheit). Add about 1/2 of water into the pan. It takes anywhere from 40 min to 60 min depending on the size and the species of squash/pumpkin. Do the test with the pointed knife to check for doneness.

Cool it off, cut it open, scoop out the seeds and the flesh, process in food processor with a bit of coconut oil. It will be almost creamy. Dogs love it and you can serve it as is or add hemp seeds on top when you serve it. It is a good once a week.

The other way is to cut the pumpkin into small pieces cook it in water or steam - in a pot on the stove - mash it add coconut oil and serve. You can grind the seeds in the food processor and add to other dishes. Use within 1 day or freeze in portions.

Spaghetti squash is also a great option for all the members of the family - half for the dogs and the other half for the 2-legged people in the home. Seeds need to be ground and then added to the dogs' dinner. I bake that squash in the oven.

Squash and pumpkin don't need a lot of protein added if you use the seeds. The seeds are high in protein.

PLEASE do NOT cook this fabulous vegetable in a microwave. You will ruin all its goodness.
